Turn revered french fries into more than just an everyday side dish.
It's hard to improve french fries—they're hot, crisp, salty and delicious. Not only do these loaded-fries recipes offer distinction in your shareable-appetizer category, but they lend themselves to promotional menus beautifully. St. Patrick's Day special? Recipes for Playful, Distinctive and Delicious Loaded Fries
Corned Beef Hash with Fries
Menu Solutions—Breakfast, Brunch or All-Day Breakfast; St. Patrick's Day Promotion
Our chefs combine the flavours found at a mom-and-pop diner for this rustic presentation of loaded fries. Instead of hash browns, they chop cooked steak fries, then add a sauté of corned beef hash and caramelized onion over top. They drizzle with a sauce made with Kraft Bistro Sauce embellished with honey, then crown it with a fried egg.
Philly Cheese Steak Fries
Menu Solutions—Shareable Appetizer; Small Plates; Sports Promotion; Regional Pride Promotion
Our chefs spin the classic Philly cheese steak into a savoury, delicious loaded-fries dish. They start with thinly sliced rib eye tossed in steak sauce, then layer steak fries and sautéed onions over top. They add a flourish of the famed Philly cheese steak's Cheez Whiz Process Cheese Product. "This is a great replacement for nachos on an app menu," says Aliza Katz, senior corporate chef for Kraft Foodservice. "Cheez Whiz adds that melted, velvety texture that's perfect for this dish."
Rib-Eyes with Steak Fries
Menu Solutions—Shareable Appetizer; Small Plates; Lunch Menu; Dinner Menu; Late-Night Menu
Our chefs take a classic steak dinner and turn it into a fun one-bowl concept. The star of the dish is the rich, tangy gravy that coats the meat, mushrooms and fries beautifully. Mushrooms seared in butter get a hit of chicken stock and Bull's-Eye Bold Original Barbecue Sauce. They're cooked until a nice sheen develops, and until the sauce is reduced. "The barbecue sauce imparts a shiny glaze on the mushrooms, and the butter balances out the sauce really well," says Chef Katz. To plate, our chefs toss grilled strips of rib eye with the glazed mushrooms and reserved sauce, as well as thick-cut steak fries. The result is a satisfying, flavourful, comfort-food dish.
Asian Fish 'n Chips
Menu Solutions—Shareable Appetizer; Lunch Menu; Dinner Menu
A twist on fish and chips, this refined version of loaded fries is a study in contrasting textures and the perfumed flavours of Asia. "For chefs looking to showcase fish in a fun, familiar-but-different way, this dish is perfect," says Chef Katz. Our chefs coat halibut in a mixture of lemongrass and pickled ginger, then pan sauté until crisp. They place the fish over crinkle-cut fries, then layer on more flavour with a drizzle of Kraft Mayo Real Mayonnaise embellished with lime juice and sriracha. A blend of hoisin sauce and rice-wine vinegar adds a final dash of flavour. Green onions garnish the dish. "You get the crunch of the fries against the soft texture of the halibut, and the sweetness of the hoisin against the perfume of the lemongrass and ginger," says Chef Katz.
BBQ Bacon Cheddar Burger-Loaded Fries
Menu Solutions—Shareable Appetizer; Lunch Menu; Dinner Menu; Late-Night Menu
These loaded fries deconstruct burger and fries with a deeply satisfying result. Cooked ground beef is topped with steak fries and a garnish of lettuce, tomato, onion and bacon. The signature of the dish lies in the finishing sauce—a simple blend of Cheez Whiz Process Cheese Product and Bull's-Eye Bold Original Barbecue Sauce. "Bull's-Eye plus Cheez Whiz equals fantastic," says Chef Katz. "You get savoury, sweet and smoky from the combination."
